Instant Pot Corned Beef & Cabbage (Easy One-Pot Meal!)

This Instant Pot Corned Beef & Cabbage recipe is the easiest way to get a tender, flavorful meal without spending hours in the kitchen. Everything—corned beef, cabbage, carrots, and potatoes—cooks in one pot, making it a fuss-free meal for St. Patrick’s Day or any cozy dinner night! 🍀

Ingredients:

  • 3-4 lb corned beef brisket (with spice packet)

  • 4 cups beef broth (or water)

  • 1 onion, quartered

  • 3 cloves garlic, smashed

  • 1 lb baby potatoes (or 4 large potatoes, quartered)

  • 4 large carrots, peeled and cut into chunks

  • 1 small head of cabbage, cut into wedges

Instructions:

1️⃣ Cook the Corned Beef: Place the corned beef, spice packet, onion, and garlic in the Instant Pot. Add beef broth (or water) until the brisket is mostly covered. Close the lid, set to Manual (High Pressure) for 90 minutes, and let it naturally release for 15 minutes before opening.

2️⃣ Add the Veggies: Remove the corned beef and tent with foil to rest. Add potatoes, carrots, and cabbage to the Instant Pot. Seal the lid and cook on Manual (High Pressure) for 4 minutes, then quick release.

3️⃣ Slice & Serve: Slice the corned beef against the grain and serve with the tender veggies. Enjoy!
